A good Roman pizza takes shape long before it reaches the oven, and it all comes down to three things we look after every day: the dough, the fire, and the toppings.

Our dough undergoes a long fermentation process, resting to develop a deeper, rounder flavour and an incredibly light texture. This thin dough is what gives the pizza its signature crispness and a light, airy rim.
Baked in Two Wood-Fired Ovens
We bake over wood, in two ovens running at the same time. The high heat sets the dough in a few minutes: the edge turns golden and crisp while the middle stays soft. The second oven means you never wait too long, and your pizza reaches the table hot even when we are busy.
Carefully Chosen Toppings
Everything starts from a good base, tomato and cheese, and from there we build it up flavour by flavour. We choose the prosciutto, shrimp, Grana Padano, kulen, and kajmak with care, from suppliers we trust, because on a base this thin every ingredient counts.
